Keto Cauliflower and Bacon Tater Tots:
Ingredients
Cooking spray
4 c. cauliflower florets (about 1/2 large cauliflower)
1 large egg, lightly beaten
1 cup shredded cheddar
1 cup freshly grated Parmesan
½ cup onion
½ cup NIKU Farms pasture-raised bacon
2/3 c. panko breadcrumbs
Salt and pepper to taste
